I love making sausage. I mean, I REALLY love making sausage. But every once in a while, I want to make something that tastes like I spent all day making it without actually spending all day making it.
Enter the Texas Hot Link.
Texas Hot Links are bold, smoky, spicy, and packed with flavor. They’re the kind of sausage that doesn’t need a whole lot of explanation. Put one on the grill, throw it in a bun, add your favorite toppings, and get out of the way.
And now, thanks to our brand-new Texas Hot Links Seasoning Pack, making them at home has become ridiculously easy. No measuring out twelve different spices. No standing in front of the spice cabinet wondering if you actually have enough paprika. No trying to remember whether you already added the cayenne. Just grab your meat, grab your seasoning pack, and let’s make some sausage!
I want to make something very clear about our Texas Hot Links Seasoning. This isn’t some generic spice blend that we bought in bulk and put our label on. This is my recipe. I developed this blend myself, and I’ve been using this exact recipe for our Texas Hot Links for the past 10 years. It’s been mixed, tested, tweaked, cooked, smoked, grilled, and eaten more times than I could possibly count.
So when you buy a package of our Texas Hot Links Seasoning, you’re not buying a seasoning that was developed by someone else and rebranded by us. You’re getting the same seasoning recipe I’ve been using for a decade to make our own Texas Hot Links.
And now you can make and enjoy those same Texas Hot Links in the comfort of your own home.
There’s something pretty satisfying about grinding the meat, mixing in the seasoning, stuffing the casings, and then watching those beautiful links hit the grill. The result is a sausage with that unmistakable Texas Hot Link character without requiring you to be a professional sausage maker.
So if you’ve always wanted to make your own Texas Hot Links but didn’t want to buy an entire spice rack to do it, this one is for you.
Grab a package of our Texas Hot Links Seasoning, follow the recipe below, and before you know it, you’ll have a pile of homemade hot links ready for the grill. And trust me… These are going to disappear FAST.

The Easiest Texas Hot Links EVER
Ingredients
- 5 lbs ground pork
- 1.25 cups Texas Hot Link Seasoning
- 1 cup ice cold light beer or water
Optional
- hog casings
- 1 tsp insta cure #1
Instructions
If you plan on linking this sausage up – Prepare the casings
- Rinse off the salt and flush the casings with some cool water. Place the cleaned casings in some fresh water with some baking soda in it (I use 1 tsp per quart of water) and place in the refrigerator. If you let your casings soak for at least 12 hours, they will be nice and tender by the time you use them.
Make the Sausage
- Take your ground meat, mix it with my spice blend and your ice-cold liquid.Mix till the meat is very sticky and will stick to the underside of your hand.
- At this point you can make skinless sausage, patties, meatballs, or if you choose sausage links.
Cooking
- Cook this sausage hot and fast. On a grill set to 250f grill/smoke till you reach an internal of 155f (68.3c).
SPECIAL NOTES
- This recipe produces a fresh sausage that can be prepared and eaten the same day its made. If you choose to add curing salt you must let the sausage rest in the refrigerator overnight before cooking/eating.

Oh Eric, in this video you became greedy. Really? Just buy the packets from us? No recipe? No good, Eric, no good. Shame on you. for all these years We come to learn something from you. We don’t come to buy packets.
Even if I ever buy, I will buy from you because I like you and I have followed you for many years, but marketing only!! Look at your friend Bradley Chad’s barbecue. He’s selling mixes. I buy from him too but he has recipes also.
He gives you the option: if you want to do it by yourself, here is the recipe. If you want the convenience, buy it. You should follow him. That’s good, respectable, and very honorable for him.
For you this greedy approach not good I hope you discontinue that immediately.
Noting to reply back or say anything. It doesn’t really matter. After all who am I to tell you how to run your channel and how to make money? This is my opinion only. No need to defend yourself. Feel free to do what you want to do.
I can’t help but chuckle at your comment (which I appreciate). This video is directly aimed at the thousands of followers who have requested a seasoning blend from me. If you have been following me for years then you would already know that I don’t gatekeep sausage recipes, tips, or secrets. I understand why you would leave a comment like that but please remember that my channel appeals to people at all different levels in this craft. Imagine if I only made videos showing people how to make salami. While a very small amount of viewers would appreciate it most would not because making salami is very challenging, requires lots of special and sometimes costly equipment, and takes a very long time to produce. This is why I diversify my content to include something for everyone, even the person who has never made a sausage in their life and wants to experience a little success without having to make a huge investment. I sincerely appreciate your opinion but i feel that its a bit myopic. With that being said you’ve clearly missed this post: https://twoguysandacooler.com/texas-hot-links/
