Spicy Deep Fried Smoky Deviled Eggs

Who doesn’t love deviled eggs? 🥚 They’re a classic for a reason—but today we’re taking them up a serious notch. Crispy, smoky, creamy, and SPICY… these Spicy Deep-Fried Smoked Deviled Eggs absolutely deliver.

Start by Smoking the Eggs

The first step is adding that incredible smoky flavor. After trying several different methods, I’ve found the best way to smoke eggs is to boil them first and then cold smoke them.

The smoking time will depend on both the size of your eggs and how smoky you want the flavor to be.

  • Small to medium eggs: smoke for 30 minutes to 1 hour
  • Large to jumbo eggs: smoke for 1 to 2 hours

The shorter end of the range will give you a light, subtle smoke, while the longer times create a deeper, richer smoky flavor. It really comes down to personal preference, so don’t be afraid to experiment a little. Honestly, it’s the most delicious kind of trial and error.

Building the Smoky Yolk Filling

Once the eggs are smoked and halved, it’s time to build the filling.

I start with the classic deviled egg base, but for this recipe I added a few extra ingredients to boost the flavor:

  • Room temperature butter
  • Chili crisp
  • SavorYe

These additions are optional, but they really elevate the richness and complexity of the yolk mixture.

For this version, I chose not to add vinegar. The Dijon mustard combined with the smokiness helps cut through the richness nicely. However, if you prefer a little more brightness in your deviled eggs, you can always add a touch of acid.

Good options include:

  • Lemon juice
  • Vinegar
  • Pickle juice

If you decide to add one, start with about 1 teaspoon per dozen eggs and adjust to taste.

Adding the Crunch

Now for the part that really sets these apart: the egg whites.

Instead of leaving them plain, we’re coating the whites in unseasoned panko and frying them until golden. This gives the eggs a beautiful crispy exterior that contrasts perfectly with the creamy filling and smoky flavor.

Turn Up the Heat

If you like a little extra kick, finish the eggs with a light sprinkle of ghost chili powder. It adds just the right amount of heat without overpowering the dish.

Make It Your Own

One of the best things about this recipe is how easy it is to customize. Think of it as a starting point for your own flavor combinations.

You could try adding:

  • Crispy bacon pieces to the filling
  • Smoked cream cheese for extra richness
  • Garnishes like fresh parsley, chives, or smoked paprika

Spicy, Deep Fried, Smoked, Deviled Eggs

Ingredients

  • 1 tsp Pickle Juice
  • 1 tbsp Smoked Cream Cheese use this in place of the butter

  • fresh parsley or chopped chives for a color pop!!

Instructions

Smoking your eggs

  • Start by making hard boiled eggs. Place your eggs in a pot of boiling water and boil for 9-10 minutes. Once cooked, remove them from the water and set them in an ice cold water bath for 5-10 minutes. Peel and place into your smoker.
  • Using a cold smoke generator smoke your eggs at temperatures below 85f (29.4c)
  • For small & medium eggs follow this schedule:
    light smoke flavor – 30 minutes
    medium smoke flavor- 45 minutes
    heavy smoke flavor – 1 hour
    For Large and Jumbo eggs follow this schedule
    light smoke flavor – 1 hour
    medium smoke flavor- 1.5 hours
    heavy smoke flavor – 2 hours
  • After you have smoked your eggs, place them in a bowl and cover with cling film. Let the newly smoked eggs rest in your refrigerator for 24 hours.

Making the Deviled Eggs

  • Cut your smoked eggs in half and separate the yolks from the whites. Place the yolks in a bowl and add all of the above mentioned ingredients.
  • Break the yolks up with a whisk and whip till you get a smooth paste. If your mixture seems a little dry you can add a touch of mayo of mustard to loosed it up.
  • Be sure to taste your yolk filling and season accordingly. If you fin the mixture too rich you can always add a small amount of vinegar or lemon juice (or pickle juice) to help cut through the richness.
  • Take your yolk filling and place it into a Zip Lock bag. Move the filling to one corner of the bag and refrigerate till you are ready to use. This filling can be made a day in advance.

Deep Frying the Smoked Egg Whites

  • Set up 3 stations. AP flour in one bowl, Whisked Eggs in another, and Panko Break Crumbs in a third.
  • Coat the egg whites in the AP flour, then dip the eggs in the whisked egg mixture. Finally place it in the panko and make sure that the panko coats all sides of the egg. Place the egg to the side and repeat this process till all your eggs are coated in Panko
  • Heat a pot with oil in it to 350f (176C). Gently place your panko coated eggs in the oil and fry till golden brown. Once finished remove the fried eggs and place them on a drying rack flat side down and let them drain for several minutes.
  • The final step is to pipe your yolk filling into the cavity of your fried eggs. I would recommend piping in the filling shortly after frying so that the eggs remain crispy when eaten.
  • Cut the tip of your Zip Lock bag and begin to pipe in the filling. You will have extra filling due to the added ingredients that are in the recipe so be as generous as you like (you won't regret it).
  • For a Super Spicy version top each egg with Ghost Chili Powder.
  • Serve immediately after piping in the filling for the best and crunchiest results.
