Today we get to experiment with flavor. Sweet, Spicy, and Savory all packed into a tender and juicy pork loin cooked rotisserie. That’s what I’m talking about!!
We are using the Brazilian Flame Rotisserie Grill to cook our Pork Loin. If you don’t have a rotisserie grill you can roast the pork loin in your oven. The flavor will be slightly different but delicious, nonetheless.

Roasted Garlic, Apple, Calabrian Loin
Cooked Rotisserie
How much do you want to make? 2 lbs
Ingredients
- 2 lbs Pork Loin
Marinade
- 1 bulb garlic roasted in olive oil
- 1 sweet apple roasted
- 2 tbsp butter for the apple
- 1/2 tsp cinnamon for the apple
- 2 tbsp Calabrian pepper paste
- 120 ml apple juice
- 1 tsp kosher salt
- 1 tsp black pepper
- 2 tsp savorye
For the Rub
- 1 tsp kosher salt
- 2 tsp savorye
- 2 tbsp hot Calabrian pepper
- 2 tbsp sweet Calabrian pepper
Instructions
Prepare the Marinade
- Start by roasting the bulb of garlic. Cut the top off the bulb, place it into a small ramekin and add enough olive oil to cover. Cover with foil and roast at 400f (200c) for 40 -60 minutes.
- Next roast the apple. Peel, core, and dice your apple. Add to a small ramekin along with the cinnamon and the butter. Roast at 350f (176c) for 30 minutes.
- In you blender add the roasted garlic and a little of the olive oil that it was roasted in. Add all of the roasted apple mixture, the Calabrian pepper paste, salt, pepper, SavorYe, and apple juice. Blend till smooth. (If you find it to be too thick you can add a little more apple juice or the olive oil that you used to cook the garlic.)
Prepare the meat
- Inject your marinade into the pork loin. (I use all of this mixture when I cook mine). Tie your pork loin with butchers' twine to keep a cylindrical shape while cooking.
- Apply the rub to the top of the pork loin and place into your refrigerator uncovered for 2-4 hours.
Getting ready to cook
- Remove the loin from the fridge and skewer. If you are using a rotisserie grill with multiple skewers you might want to cut your loin in half.
- Preheat your rotisserie grill to 400f (200c). Next add your loin and cook till the internal temp reaches 132f (55.5c). Remove them from your rotisserie and let the meat rest for 7-10 minutes. Your final temp should be 143f – 145f (62.7c – 62.7c)
- Slice and enjoy
