Cajun Potato Salad

This recipe makes about 8 cups


  • 2.5 Pounds peeled potatoes and diced
  • 2 Eggs
  • 2/3 cups mayonnaise
  • 1/3 cup mustard
  • 1/2 cup pickles diced
  • 1/2 cup celery dices
  • 1/2 cup red onions diced
  • 1/4 cup green onion tops chopped
  • 3/4 teaspoon kosher salt
  • 1/2 tsp pepper
  • 1 1/2 teaspoon creole seasoning


  • Boil the eggs for 10 minutes. Once finished place the eggs in ice water to shock them. Peel the eggs and seperate the whites from the yolks. Smash the yolks with a fork and chop the whites into small pieces.
  • Peel and dice the potatoes. Place them in a pot of water to boil, add 2 tablespoons of creole seasoning and 2 bay leaf to the potato water (you can also add shrimp boil if you want). Once they are boiling, reduce the heat to a simmer and cook them for 6-8 minutes. When finished the potatoes should be somewhere between soft and firm. You don't want them too soft, but you want them soft enough to smash with your fingers.
  • Dice all the vegetables and chop the green onion tops. Set to the side.
  • Make the sauce by adding the smashed egg yolks with mustard, mayo, and spices listed above.
  • To the hot potatoes add your celery, onions, pickles, chopped up egg whites, and the sauce you just made. Mix the potatoes and start to slowly break the mixture apart. Careful not to turn the mix into mashed potato it should be lumpy.
  • Taste the potato salad and adjust the spices to your tastes
  • Let cool and store in the refrigerator. Enjoy!!
